Soup is souper… even souperb!

St. Martin in the Fields Episcopal Church holds a chicken barbecue and basket raffle every year. It’s not only a fundraiser, it’s a community event. This year, I had a Very Important and Very Powerful Job. I was a Roll Opener. Doesn’t that sound like a great Job Title? I thought so. I was celebrating my new job for at least a week. I was very excited to tell people that I was getting the job title of Roll Opener. I had a feeling it would be a plum position and I was right. Okay, punsters. I know. No plums. And I didn’t get paid any dough. Well, the rolls were past the dough stage, so that makes sense.

The chicken barbecue was fun. I took pictures, served as a Roll Opener and counted money. Not simultaneously. I’m not good at multi tasking. Apparently, most people aren’t good at it, even if they claim to be great multi taskers.

And… there was leftover chicken for sale. I bought some. My plan for it was to make a huge stockpot full of bone broth.

My mom taught me how to make huge pots of broth, like this one! I don’t use this stockpot a lot, but I am so happy that I have it!
I brought the bone broth to a boil, which took a while because that was a huge pot. It simmered for five hours. A long slow simmer ensures more flavor. When it was done, I had a lot of broth, and most of it ended up in containers in the freezer for future soups. Also in the freezer is chicken removed from the bones prior to soup making.

I had too much broth for the freezer. It was full. I’m going to be eating soup for some time to come and am very happy about that. In fact, I’ve already started eating soup. I’ve made two types of soup: a chicken vegetable soup and a lettuce soup. The chicken vegetable soup is basically the empty your refrigerator soup. Whatever vegetables you have, you throw in the pot. Each time you make it, it’s different. That’s always a fun thing to do with food. The lettuce soup is based on a recipe I found online. Lettuce eat soup

The lettuce soup is a nice light soup that is perfect for summertime. You can garnish it with fresh herbs from your herb garden and you can add a little lemon juice to it. I bought the leaf lettuce and onions from a farm market and I picked the parsley from a back yard herb garden. People think of soups as a winter food, but this soup is definitely a summer treat. I definitely recommend this lovely recipe.

  1. I’ve never heard of lettuce soup but I remember my grandmother pulling vegetables out of the fridge and putting them all together with chicken pieces for soup! I like making meals where I can freeze and just pull something out and heat it up.

    1. I had never heard of it, either! When I was thinking about the second soup, I wondered if lettuce soup even existed. I got so much leaf lettuce at the local farm. So, I looked it up and I found that recipe. And I thought, “I have all the ingredients!” I was pretty excited about that!

  2. Yum!! I am a veggie gardener and canner. A canner only because I do not have freezer space. Last week my mom can over, we pulled up onions, carrots and celery. Then we simmered it all afternoon and through the night. The next morning we canned 42 pints of veggie broth! I use it as a soup or sauce base, but my favorite is to cook my rice with it. Love that celery flavor. I love your chicken broth! Maybe I will try lettuce soup too-that’s very original. Happy Soup Making!!

  3. I wished I had thought of lettuce soup. I had so much lettuce overflowing in the raised bed. They were too old and tough for salads. They ended up in the compost bin. Next time. Love your photos.
