
Today’s prompt from the Ultimate Blogging Challenge was to write about delicious desserts. Over the years, I’ve had to completely change up what desserts I could enjoy. I used to eat all sorts of cakes and cookies gleefully. My mom was a terrific baker and she made the most wonderful cakes, including her chocolate layer cake, her sponge cake, and her Black Forest cherry cake with the most exquisite whipped cream frosting.
Unfortunately, my digestive system disagreed with my taste buds over which foods were good and which foods had to be removed from the dance card. The taste buds are easy going and happy, but the digestive system is crabby and particular. Which led to a diagnosis of food intolerances and a gluten-free diet. So, I had to get creative.

Fancy chocolates are always an occasional sweet treat. Very occasional. There’s a lot of added sugar, which is probably just not a good idea.

And then, there’s this. Nature does make the most exquisite desserts. My taste buds and my digestive system agree that this is as good as it gets.
